Position: Sous Chef
Compensation: $50,000 - $60,000 a year, based on experience and qualifications
Location: Saratoga Springs, NY
Reports To: Owner / Head Chef / General Manager
Position Summary
We are seeking a strong, organized, and service-driven Sous Chef to help lead our kitchen operations. This role supports the Executive Chef in daily execution, team leadership, food quality, prep systems, and cost control. The ideal candidate is hands-on during service, confident running the pass, and comfortable managing prep production and staff accountability.
Key Responsibilities:
Kitchen Leadership & Service
Lead and manage dinner and brunch service when the Head Chef is off or unavailable
Run the pass with strong communication and quality control
Ensure proper ticket times, plating consistency, and expo organization
Support line cooks during peak volume
Prep & Production Management
Coordinate with the Head Chef to oversee daily prep lists and par levels
Ensure prep is completed accurately and efficiently
Manage batch cooking and production schedules
Maintain organization and cleanliness in prep areas
Staff Supervision & Development
Train and coach line cooks and prep cooks
Enforce standards for sanitation, organization, and professionalism
Assist with scheduling recommendations based on volume
Hold team members accountable to performance standards
Cost Control & Operations
Monitor food cost, waste, and portion control
Assist with inventory and ordering
Ensure proper product rotation (FIFO)
Maintain DOH and food safety compliance
Qualifications
3+ years of experience in a leadership kitchen role (Sous or Lead Line Cook)
High-volume service experience preferred
Strong understanding of prep systems and production flow
Ability to lead service calmly and efficiently
Food safety certification preferred
Availability for nights, weekends, and holidays
